Egg Free Coleslaw

Here is a recipe from my sister-in-law Susan. She was looking for a recipe for coleslaw without mayo & eggs. Here is a great way to get detoxifying cabbage in your diet:

Ingredients:

  • 2 Tbsp Raisins
  • 1 Tbsp white vinegar (I used apple cider vinegar today and it turned out good)
  • 2 Tbsp oil
  • 2 Tbsp water
  • 1 Tbsp grated onion
  • 1 tsp. Dijon
  • Salt and Pepper to taste

 

  • Combine all above ingredients in a saucepan
  • Once it boils, stir for 30 seconds
  • Puree in blender
  • Toss with final two ingredients:
  • 2 cups chopped cabbage
  • 1 carrot – course grated
