Wheat-Free Pancakes

Happy Sunday,

I just had some gluten free pancakes this morning and they were great. I got a mix from whole foods and added blueberries. Here is a recipe you can use and make the mix on your own:

  • 1 c. cornmeal or corn flour
  • 1 c. buckwheat flour
  • 3/4 t. sea salt
  • 1 1/2 T. baking powder
  • 2 c. hemp seed milk
  • 1 1/2 t. walnut oil (or oil you are not allergic to)

For a sauce: we usually get frozen cherries, blueberries, blackberries, etc. add a little agave in it and thicken it with a little cornstarch or arrowroot. 

You can also add berries to the mixture.
