Chocolate Coconut Haystack Recipe Healthy Snacks & Desserts Food Clinic: November 4th @ Optimal Fitness

Hello everyone,

I’ve got a great recipe for you and cannot wait for you to try it. Some do not understand that  chocolate can be healthy,  but it all depends on the source. We are using raw cocoa in the recipe below. Did you know that raw cocoa has 9 grams of fiber in 2 tbps and 0 sugar. It is also a good source of iron & magnesium. Did I mention it tastes good? This is a healthy snack that is quick and easy to make and I am sure that you will love it.  I love the combination of chocolate and coconut and this recipe combines the two perfectly.  I am constantly looking for healthy alternatives to unhealthy foods, so please comment below and let me know what you have found to work for you.

Chocolate Coconut Haystacks (Source: Caf© Solstice)
3/4 cup coconut oil melted
1/2 cup raw cocoa powder
1/3-1/2 cup agave nectar
1 tsp. vanilla extract
3 cups of shredded coconut

Mix the above batter in with the shredded coconut in a mixing bowl. Shape the batter into balls on a tray lined with parchment paper. Set in the refrigerator. Haystacks will last 6-12 months in refrigerator or freezer.
